Baked Corn Bread Pudding

Ingredients

  • 1 can crushed corn
  • 1 cup prepared bread (soaked, squeezed dry)
  • 2 eggs
  • 1/2 cup milk
  • 1 onion, grated
  • 4 tablespoons finely minced parsley
  • 2 teaspoons salt
  • 1 teaspoon paprika

Method

  1. 1 Soak stale bread in hot water, squeeze dry in a cloth, and crumble.
  2. 2 Grease custard cups and dust with bread crumbs.
  3. 3 Mix corn, bread, eggs, milk, onion, parsley, salt, and paprika until well combined.
  4. 4 Pour mixture into prepared cups and place in a pan of warm water.
  5. 5 Bake in a moderate oven (350°F) for 35 minutes.
