Baked Corn Bread Pudding
Ingredients
- 1 can crushed corn
- 1 cup prepared bread (soaked, squeezed dry)
- 2 eggs
- 1/2 cup milk
- 1 onion, grated
- 4 tablespoons finely minced parsley
- 2 teaspoons salt
- 1 teaspoon paprika
Method
- 1 Soak stale bread in hot water, squeeze dry in a cloth, and crumble.
- 2 Grease custard cups and dust with bread crumbs.
- 3 Mix corn, bread, eggs, milk, onion, parsley, salt, and paprika until well combined.
- 4 Pour mixture into prepared cups and place in a pan of warm water.
- 5 Bake in a moderate oven (350°F) for 35 minutes.
