Baked Colcannon Casserole
Ingredients

- greens or spinach
- butter
- pepper

Method
- 1 Boil potatoes and greens separately until tender.
- 2 Mash the potatoes and squeeze the greens dry, then chop them finely.
- 3 Mix the chopped greens with the mashed potatoes, adding butter, pepper, and salt.
- 4 Press the mixture into a well-buttered mold.
- 5 Bake in a hot oven (425°F) for 10 minutes.
