Baked Cod With Vegetables

Ingredients

  • 4 cod fillets (4 ounces each)
  • salt and pepper to taste
  • 1 onion, chopped
  • 1 carrot, chopped
  • 1 red pepper, sliced
  • 1 celery stalk, chopped
  • 1 clove garlic, minced
  • 2 tablespoons parsley, chopped
  • fresh thyme sprigs, optional
  • basil, chopped, optional
  • ginger, minced, optional
  • 2 teaspoons olive oil, divided
  • 4 teaspoons lemon juice, divided

Method

  1. 1 Preheat oven to 400°F. Cut four large rectangles of parchment paper or foil and fold in half to crease, then unfold.
  2. 2 Place a fish fillet on each rectangle. Season with salt and pepper, then top with vegetables and herbs.
  3. 3 Drizzle each packet with 1/2 teaspoon oil and 1 teaspoon lemon juice. Fold paper in half and crimp edges tightly to seal.
  4. 4 Transfer packets to a baking sheet. Bake until fish reaches an internal temperature of 145°F, about 10 to 12 minutes.
