Baked Cod With Tomatoes And Peppers

Ingredients

  • 1 pound cod fillets, fresh or frozen, skinless and thawed
  • 1/4 cup green bell pepper, chopped
  • 1/2 can (14.5 ounces) low-sodium tomatoes
  • 1/4 cup onion, chopped
  • 1/4 teaspoon oregano

Method

  1. 1 Preheat oven to 350°F. Oil or spray a 9x13-inch baking dish.
  2. 2 Cut fish into four pieces and place in the baking dish.
  3. 3 Top fish with green peppers, tomatoes, onions, and oregano.
  4. 4 Bake about 20 minutes or until fish flakes easily with a fork.
