Baked Cod With Tomatoes And Peppers
Ingredients
- 1 pound cod fillets, fresh or frozen, skinless and thawed
- 1/4 cup green bell pepper, chopped
- 1/2 can (14.5 ounces) low-sodium tomatoes
- 1/4 cup onion, chopped
- 1/4 teaspoon oregano
Method
- 1 Preheat oven to 350°F. Oil or spray a 9x13-inch baking dish.
- 2 Cut fish into four pieces and place in the baking dish.
- 3 Top fish with green peppers, tomatoes, onions, and oregano.
- 4 Bake about 20 minutes or until fish flakes easily with a fork.
