Baked Cod And Potato Casserole
Ingredients
- 1 cup finely chopped salt cod, soaked and freshened
- 2 cups mashed potato
- 2 cups cream or milk
- 2 large eggs, well-beaten
- ½ cup melted butter
- Black pepper to taste
Method
- 1 Preheat oven to 425°F. Finely chop the salt cod and soak it to remove excess salt, then drain well.
- 2 In a large bowl, mix the chopped cod, mashed potato, cream (or milk), beaten eggs, melted butter, and black pepper until thoroughly combined.
- 3 Pile the mixture roughly into an earthen baking dish or casserole.
- 4 Bake for 25 minutes at 425°F. If the top isn't browning, brush with a little melted butter during the last 5 minutes.
