Baked Coconut Rose Water Cake
Ingredients
- 1 cup grated coconut
- 1 cup sugar
- 6 tbsp rose water
- 8 egg yolks
- 2 tbsp rose water
Method
- 1 Boil sugar and 6 tbsp rose water, skimming scum. Add coconut and heat through, stirring constantly to prevent burning.
- 2 Beat 8 egg yolks with 2 tbsp rose water. Gradually beat in the warm coconut mixture.
- 3 Beat continuously with a wooden spoon for 1 hour.
- 4 Pour batter into pans and bake immediately in a moderate oven (350°F) until set.
