Baked Coconut Rose Water Cake

Ingredients

  • 1 cup grated coconut
  • 1 cup sugar
  • 6 tbsp rose water
  • 8 egg yolks
  • 2 tbsp rose water

Method

  1. 1 Boil sugar and 6 tbsp rose water, skimming scum. Add coconut and heat through, stirring constantly to prevent burning.
  2. 2 Beat 8 egg yolks with 2 tbsp rose water. Gradually beat in the warm coconut mixture.
  3. 3 Beat continuously with a wooden spoon for 1 hour.
  4. 4 Pour batter into pans and bake immediately in a moderate oven (350°F) until set.
