Baked Coconut Cream Pie
Ingredients
- 3/4 lb grated coconut, brown skin removed
- 1/2 lb sugar
- 1/2 lb butter
- 6 egg whites, beaten
- 1/2 pint cream
- 1 glass brandy or rosewater
- 1/4 lb crackers, pounded fine
Method
- 1 Beat the egg whites until light.
- 2 Combine the beaten egg whites with the grated coconut, sugar, butter, cream, brandy (or rosewater), and pounded crackers.
- 3 Mix all ingredients together thoroughly.
- 4 Place the mixture into a pastry-lined dish.
- 5 Bake until set.
