Baked Cocoa Pudding With Meringue

Ingredients

  • 1 cup milk
  • 2 egg yolks
  • 2 tablespoons flour
  • 1 pinch salt
  • 4 teaspoons cocoa powder
  • 3 tablespoons sugar
  • 1/2 teaspoon vanilla extract

Method

  1. 1 Heat milk in the top of a double boiler.
  2. 2 Mix flour and cocoa with a little cold milk until smooth, then add to hot milk.
  3. 3 Cook, stirring often, for 8-10 minutes.
  4. 4 Beat egg yolks with sugar and salt, then strain the hot pudding mixture into them.
  5. 5 Return to double boiler and cook 1-2 minutes until slightly thickened.
  6. 6 Remove from heat, stir in vanilla, and pour into a serving dish.
  7. 7 Top with meringue and brown in a moderate oven (350°F) with the door open for 10-15 minutes.
