Baked Cocoa Pudding With Meringue
Ingredients
- 1 cup milk
- 2 egg yolks
- 2 tablespoons flour
- 1 pinch salt
- 4 teaspoons cocoa powder
- 3 tablespoons sugar
- 1/2 teaspoon vanilla extract
Method
- 1 Heat milk in the top of a double boiler.
- 2 Mix flour and cocoa with a little cold milk until smooth, then add to hot milk.
- 3 Cook, stirring often, for 8-10 minutes.
- 4 Beat egg yolks with sugar and salt, then strain the hot pudding mixture into them.
- 5 Return to double boiler and cook 1-2 minutes until slightly thickened.
- 6 Remove from heat, stir in vanilla, and pour into a serving dish.
- 7 Top with meringue and brown in a moderate oven (350°F) with the door open for 10-15 minutes.
