Baked Clams With Breadcrumbs

Ingredients

  • 1 pint clams
  • 1 cup clam juice
  • 1 cup milk
  • 2 cups breadcrumbs
  • pepper to taste
  • butter for dots and topping

Method

  1. 1 Clean and scrub clams, then heat until they open. Drain carefully and strain the juice, saving one cupful.
  2. 2 In a baking dish, arrange clams and breadcrumbs in alternate layers. Season with pepper and dot with butter.
  3. 3 Ensure the top layer consists of crumbs and butter. Pour the hot liquid (clam juice and milk) over the dish.
  4. 4 Bake in a brisk oven (400°F) until heated through and the top is golden.
