Baked Clams With Breadcrumbs
Ingredients
- 1 pint clams
- 1 cup clam juice
- 1 cup milk
- 2 cups breadcrumbs
- pepper to taste
- butter for dots and topping
Method
- 1 Clean and scrub clams, then heat until they open. Drain carefully and strain the juice, saving one cupful.
- 2 In a baking dish, arrange clams and breadcrumbs in alternate layers. Season with pepper and dot with butter.
- 3 Ensure the top layer consists of crumbs and butter. Pour the hot liquid (clam juice and milk) over the dish.
- 4 Bake in a brisk oven (400°F) until heated through and the top is golden.
