Baked Chocolate Rice Pudding With Cinnamon
Ingredients
- 1/2 cup rice
- 2 1/2 cups boiling water
- 3 ounces chocolate, cut into fine pieces
- 1 quart milk
- 3/4 cup sugar
- 1/2 teaspoon cinnamon extract
- 2 teaspoons vanilla
- 2 tablespoons butter
Method
- 1 Wash rice in warm water. Place rice and boiling water in a saucepan and cook until rice is soft and water is absorbed.
- 2 Place chocolate in milk. Bring to a boil, then stir in sugar, cinnamon extract, vanilla, butter, and the prepared rice.
- 3 Pour mixture into a baking dish. Bake in a moderate oven (350°F) for 40 minutes, stirring frequently.
