Baked Chocolate Meringue Hearts

Ingredients

  • 3 ounces unsweetened chocolate
  • 1 pound sifted powdered sugar
  • 3 egg whites, unbeaten
  • Vanilla extract to flavor
  • Granulated sugar for rolling

Method

  1. 1 Melt chocolate over hot water.
  2. 2 Mix in powdered sugar until thoroughly combined.
  3. 3 Work in egg whites and vanilla to form a stiff, pliable paste.
  4. 4 Roll paste to 1/4-inch thickness on a surface dusted with granulated sugar.
  5. 5 Cut into heart shapes and place on lightly oiled pans.
  6. 6 Bake in a very moderate oven (300°F) until firm to the touch and a solid crust forms.
  7. 7 Cool briefly before removing from pans.
