Baked Chocolate Custard

Ingredients

  • 1 pint milk
  • 2 eggs
  • 1 oz chocolate, shaved
  • 1/4 tsp salt
  • 1 inch stick cinnamon
  • 3 tbsp sugar
  • 1 tbsp boiling water
  • 2 tbsp sugar

Method

  1. 1 Heat milk and cinnamon in a double boiler for 10 minutes.
  2. 2 Melt chocolate with 3 tbsp sugar and 1 tbsp boiling water until smooth.
  3. 3 Stir chocolate mixture into hot milk, then remove from heat and cool.
  4. 4 Beat eggs, salt, and 2 tbsp sugar. Stir in cooled milk mixture and strain.
  5. 5 Pour into cups in a water bath and bake at 350°F for 30 minutes until firm.
  6. 6 Serve very cold.
