Baked Chocolate Custard With Meringue

Ingredients

  • 4 heaping tablespoons grated bitter chocolate
  • 1 quart hot milk
  • 6 egg yolks
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • Water for bain-marie
  • Meringue topping

Method

  1. 1 Dissolve the grated chocolate in the hot milk.
  2. 2 Beat egg yolks with sugar and vanilla, then stir into the chocolate milk.
  3. 3 Pour into custard cups placed in a baking dish with an inch of hot water.
  4. 4 Bake in a slow oven (300°F) until set.
  5. 5 Top with meringue and return to oven until puffed and brown.
  6. 6 Serve cold.
