Baked Chicken and Vegetable Packets
Ingredients
- 4 boneless, skinless chicken breasts
- Salt and pepper to taste
- 1 red onion, julienned
- 1 carrot, julienned
- 1 red pepper, julienned
- 1 celery stalk, julienned
- 1/2 zucchini, julienned
- 1 clove garlic, minced
- 2 tablespoons fresh basil, chopped
- Fresh thyme sprigs, optional
- Fresh parsley, chopped, optional
- Ginger, minced, optional
- 2 teaspoons olive oil, divided
- 4 teaspoons lemon juice, divided
Method
- 1 Preheat oven to 400°F. Cut four large rectangles of parchment paper or foil and fold in half to create a crease.
- 2 Place each chicken breast in the middle of the paper. Season with salt and pepper, then top with julienned vegetables, garlic, herbs, and spices.
- 3 Drizzle each packet with 1/2 teaspoon olive oil and 1 teaspoon lemon juice. Fold the paper in half and crimp edges tightly to seal.
- 4 Transfer packets to a baking sheet. Bake for about 20 minutes, or until chicken reaches an internal temperature of 165°F.
