Baked Cheese Squash Casserole

Ingredients

  • 1 cup squash pulp
  • 1 well-beaten egg
  • 2 tablespoons butter
  • 1 teaspoon salt
  • 1/2 teaspoon paprika
  • 2 tablespoons milk
  • 1 tablespoon finely minced parsley
  • fine bread crumbs
  • 2 tablespoons grated cheese

Method

  1. 1 Wash, pare, and cut squash into pieces, discarding seeds. Steam until tender, drain well, and let dry on the back of the range.
  2. 2 Rub the squash pulp through a sieve into a bowl.
  3. 3 For each cup of pulp, mix in one well-beaten egg, 2 tablespoons butter, 1 teaspoon salt, 1/2 teaspoon paprika, 2 tablespoons milk, and 1 tablespoon minced parsley.
  4. 4 Pour the mixture into a well-greased baking dish. Cover with fine bread crumbs and 2 tablespoons grated cheese.
  5. 5 Bake in a slow oven (300°F) for 20 minutes until heated through and golden.
