Baked Cheese Squash Casserole
Ingredients
- 1 cup squash pulp
- 1 well-beaten egg
- 2 tablespoons butter
- 1 teaspoon salt
- 1/2 teaspoon paprika
- 2 tablespoons milk
- 1 tablespoon finely minced parsley
- fine bread crumbs
- 2 tablespoons grated cheese
Method
- 1 Wash, pare, and cut squash into pieces, discarding seeds. Steam until tender, drain well, and let dry on the back of the range.
- 2 Rub the squash pulp through a sieve into a bowl.
- 3 For each cup of pulp, mix in one well-beaten egg, 2 tablespoons butter, 1 teaspoon salt, 1/2 teaspoon paprika, 2 tablespoons milk, and 1 tablespoon minced parsley.
- 4 Pour the mixture into a well-greased baking dish. Cover with fine bread crumbs and 2 tablespoons grated cheese.
- 5 Bake in a slow oven (300°F) for 20 minutes until heated through and golden.
