Baked Cheese Souffle

Ingredients

  • 4 tbsp butter
  • 2 tbsp flour
  • ¼ tsp baking soda
  • ¼ tsp mustard
  • a few grains cayenne pepper
  • ½ cup milk
  • 1 cup grated cheese (½ lb)
  • 3 egg yolks
  • 3 egg whites

Method

  1. 1 Cook butter and flour together. Stir in sifted soda, mustard, and cayenne.
  2. 2 Gradually add milk and cook until the sauce boils.
  3. 3 Remove from heat. Stir in grated cheese and beaten egg yolks until well mixed.
  4. 4 Fold in stiffly beaten egg whites.
  5. 5 Pour into a buttered dish and bake in a moderate oven (350°F) for 25 minutes. Serve immediately.
