Baked Cheese Souffle
Ingredients
- 4 tbsp butter
- 2 tbsp flour
- ¼ tsp baking soda
- ¼ tsp mustard
- a few grains cayenne pepper
- ½ cup milk
- 1 cup grated cheese (½ lb)
- 3 egg yolks
- 3 egg whites
Method
- 1 Cook butter and flour together. Stir in sifted soda, mustard, and cayenne.
- 2 Gradually add milk and cook until the sauce boils.
- 3 Remove from heat. Stir in grated cheese and beaten egg yolks until well mixed.
- 4 Fold in stiffly beaten egg whites.
- 5 Pour into a buttered dish and bake in a moderate oven (350°F) for 25 minutes. Serve immediately.
