Baked Cheese Potato Croquettes
Ingredients
- 4 oz grated cheddar cheese
- 3 oz mashed potato
- 2 eggs
- 1/2 oz butter
- 2 tsp cream
- 1/2 tsp salt
- Black pepper to taste
Method
- 1 Melt butter in a saucepan over moderate heat. Add cheese, beaten eggs, salt, and pepper. Stir until cheese dissolves, ensuring the mixture does not boil.
- 2 Stir in the mashed potato until well combined. Pour into a greased flat tin and bake until set. Let cool completely.
- 3 Cut the cooled cheese mixture into squares or shapes. Fry in butter until golden brown and serve immediately.
