Baked Cheese Potato Croquettes

Ingredients

  • 4 oz grated cheddar cheese
  • 3 oz mashed potato
  • 2 eggs
  • 1/2 oz butter
  • 2 tsp cream
  • 1/2 tsp salt
  • Black pepper to taste

Method

  1. 1 Melt butter in a saucepan over moderate heat. Add cheese, beaten eggs, salt, and pepper. Stir until cheese dissolves, ensuring the mixture does not boil.
  2. 2 Stir in the mashed potato until well combined. Pour into a greased flat tin and bake until set. Let cool completely.
  3. 3 Cut the cooled cheese mixture into squares or shapes. Fry in butter until golden brown and serve immediately.
