Ingredients

  • 2 tablespoons butter
  • 2 tablespoons flour
  • ½ cup thin cream
  • ½ cup white stock
  • ½ cup milk
  • ½ pound grated cheese
  • 1 dash salt
  • 1 dash paprika
  • 3 whole eggs
  • 4 egg yolks

Method

  1. 1 Melt butter and flour together, then stir in cream, white stock, and milk.
  2. 2 Add grated cheese, salt, and paprika, stirring until melted and smooth.
  3. 3 Beat eggs and yolks, then stir into the warm cheese sauce.
  4. 4 Pour mixture into buttered timbale molds set in a pan of hot water.
