Baked Cheese And Egg Custards
Ingredients
- 2 tablespoons butter
- 2 tablespoons flour
- ½ cup thin cream
- ½ cup white stock
- ½ cup milk
- ½ pound grated cheese
- 1 dash salt
- 1 dash paprika
- 3 whole eggs
- 4 egg yolks
Method
- 1 Melt butter and flour together, then stir in cream, white stock, and milk.
- 2 Add grated cheese, salt, and paprika, stirring until melted and smooth.
- 3 Beat eggs and yolks, then stir into the warm cheese sauce.
- 4 Pour mixture into buttered timbale molds set in a pan of hot water.
- 5 Bake until centers are firm, then serve hot with cream or tomato sauce.
