  • 1 ½ cups stock
  • 2 oz ham, diced
  • Salt and pepper to taste
  • ½ cup grated Parmesan cheese
  • ½ cup grated Cheddar cheese
  • 1 ½ oz butter
  • Gravy for serving

Method

  1. 1 Trim the celery, removing all green tops. Cut the stalks into 4-inch pieces.
  2. 2 Blanch the celery pieces, then braise them in stock with diced ham, salt, and pepper until tender.
  3. 3 Drain the celery and arrange it on a serving dish.
  4. 4 Sprinkle with grated Parmesan and Cheddar cheese, then dot with butter.
