Baked Celery And Onion Savory
Ingredients
- 1 large head of celery
- 1 pint milk
- 3 eggs
- 6 oz fine wheatmeal
- 2 oz butter
- 1 English onion
- pepper and salt to taste
Method
- 1 Prepare celery by cutting into small pieces and chop onion finely.
- 2 Stew celery and onion gently in half the milk, butter, and seasoning until tender.
- 3 Make a batter by whisking the remaining milk, eggs, and wheatmeal together.
- 4 Mix the tender vegetable mixture into the batter.
- 5 Grease a pie dish, pour in the mixture, and bake in a moderate oven (350°F) for 1-1/2 hours.
- 6 Serve hot with potatoes and tomato sauce.
