Baked Cauliflower Souffle
Ingredients
- 3 eggs
- 8 ounces cooked cauliflower
- 1/2 ounce butter
- 1/2 teaspoon salt
Method
- 1 Beat egg yolks and whites separately, whipping whites to stiff peaks.
- 2 Chop cauliflower finely, mix with salt and egg yolks, then fold in whites.
- 3 Pour mixture into a greased pie dish and bake in a 400°F oven for 20 minutes.
- 4 Remove from dish and serve immediately.
