Baked Cauliflower Souffle

Ingredients

  • 3 eggs
  • 8 ounces cooked cauliflower
  • 1/2 ounce butter
  • 1/2 teaspoon salt

Method

  1. 1 Beat egg yolks and whites separately, whipping whites to stiff peaks.
  2. 2 Chop cauliflower finely, mix with salt and egg yolks, then fold in whites.
  3. 3 Pour mixture into a greased pie dish and bake in a 400°F oven for 20 minutes.
  4. 4 Remove from dish and serve immediately.
