Baked Cauliflower Potato Cheese Casserole
Ingredients
- 1 medium cauliflower, boiled and cooled
- 1 lb cold boiled potatoes
- 1 cup milk
- 3 eggs
- 8 oz Allinson fine wheatmeal
- 1.5 oz butter
- 4 oz grated cheese
- Salt and pepper to taste
Method
- 1 Chop the boiled cauliflower and potatoes into bite-sized pieces.
- 2 Whisk together the milk, eggs, wheatmeal, salt, and pepper to form a smooth batter.
- 3 Place the vegetables in a pie dish, sprinkling half the cheese between the layers.
- 4 Pour the batter over the vegetables, dot with butter bits, and top with remaining cheese.
- 5 Bake for 1 hour until golden and set.
