Baked Cauliflower Au Gratin

Ingredients

  • 1 head cauliflower
  • 1 oz butter
  • 1 oz flour
  • ½ cup water
  • 2 tbsp cream
  • 2 oz grated Parmesan cheese
  • salt and pepper to taste
  • a pinch of cayenne

Method

  1. 1 Boil the cauliflower until tender, then remove green leaves and press into an oval shape in a baking dish.
  2. 2 Melt butter in a saucepan, whisk in flour until smooth, then add water and cook while stirring.
  3. 3 Stir in cream, 1 oz Parmesan, salt, pepper, and cayenne to create a sauce.
  4. 4 Pour the sauce over the cauliflower, sprinkle with remaining cheese, and broil or bake at 425°F until golden brown.
