Baked Caramel Rice Pudding With Raisins

Ingredients

  • 1/3 cup rice
  • 1/2 teaspoon lemon extract
  • 3 eggs
  • 2 tablespoons Crisco
  • 1/4 teaspoon salt
  • 2 cups milk
  • 1/4 cup sultana raisins
  • 2 tablespoons powdered sugar
  • 1/4 cup granulated sugar

Method

  1. 1 Melt granulated sugar in a small saucepan over medium heat until browned but not burnt.
  2. 2 Pour the hot caramel into a pudding mold and spread it evenly over the inside surface.
  3. 3 Wash rice, parboil, and drain; then cook slowly in milk for 30 minutes.
  4. 4 Transfer the rice to a basin and stir in powdered sugar, Crisco, salt, raisins, lemon extract, and well-beaten eggs.
  5. 5 Pour the mixture into the prepared caramel-lined mold.
  6. 6 Place the mold in a pan of boiling water and bake in a moderate oven (350°F) until set.
  7. 7 Turn out onto a plate and serve hot or cold.
