Baked Caramel Rice Pudding With Raisins
Ingredients
- 1/3 cup rice
- 1/2 teaspoon lemon extract
- 3 eggs
- 2 tablespoons Crisco
- 1/4 teaspoon salt
- 2 cups milk
- 1/4 cup sultana raisins
- 2 tablespoons powdered sugar
- 1/4 cup granulated sugar
Method
- 1 Melt granulated sugar in a small saucepan over medium heat until browned but not burnt.
- 2 Pour the hot caramel into a pudding mold and spread it evenly over the inside surface.
- 3 Wash rice, parboil, and drain; then cook slowly in milk for 30 minutes.
- 4 Transfer the rice to a basin and stir in powdered sugar, Crisco, salt, raisins, lemon extract, and well-beaten eggs.
- 5 Pour the mixture into the prepared caramel-lined mold.
- 6 Place the mold in a pan of boiling water and bake in a moderate oven (350°F) until set.
- 7 Turn out onto a plate and serve hot or cold.
