Baked Candied Yams With Orange Spice
Ingredients
- 1 1/2 cups yams, peeled and sliced
- 1/4 cup packed brown sugar
- 1 teaspoon sifted flour
- 1/4 teaspoon salt
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon grated orange peel
- 1/3 tablespoon unsalted margarine, softened
- Orange juice
Method
- 1 Preheat oven to 350°F. Cut yams in half and boil until tender but firm, about 20 minutes. Peel and slice into ¼-inch rounds when cool enough to handle.
- 2 In a bowl, combine brown sugar, flour, salt, cinnamon, nutmeg, and orange peel.
- 3 Place half the yam slices in a casserole dish. Sprinkle with half the sugar mixture and dot with half the margarine.
- 4 Add the remaining yams, sugar mixture, and margarine. Pour orange juice over the top.
- 5 Bake uncovered for 20 minutes.
