Baked Candied Yams With Orange Spice

Ingredients

  • 1 1/2 cups yams, peeled and sliced
  • 1/4 cup packed brown sugar
  • 1 teaspoon sifted flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon grated orange peel
  • 1/3 tablespoon unsalted margarine, softened
  • Orange juice

Method

  1. 1 Preheat oven to 350°F. Cut yams in half and boil until tender but firm, about 20 minutes. Peel and slice into ¼-inch rounds when cool enough to handle.
  2. 2 In a bowl, combine brown sugar, flour, salt, cinnamon, nutmeg, and orange peel.
  3. 3 Place half the yam slices in a casserole dish. Sprinkle with half the sugar mixture and dot with half the margarine.
  4. 4 Add the remaining yams, sugar mixture, and margarine. Pour orange juice over the top.
  5. 5 Bake uncovered for 20 minutes.
