Baked Butterfish With Tomatoes And Onions
Ingredients
- butterfish, cleaned and washed
- flour, for rolling
- hot fat, for frying
- 1 cup stewed tomatoes
- 4 onions, chopped fine
- 1 tsp salt
- 1 tsp paprika
- ½ tsp thyme
Method
- 1 Cleanse, wash, and drain the fish. Lightly roll in flour.
- 2 Brown the fish quickly in hot fat.
- 3 Place fish in a baking dish. Top with stewed tomatoes, chopped onions, salt, paprika, and thyme.
- 4 Bake in a moderate oven (350°F) for 20 minutes. Serve directly from the dish.
