Baked Butter Bean Rissoles
Ingredients
- 2 oz butter beans
- 1 tablespoon cold mashed potatoes
- 1/2 small onion, chopped fine
- 1/2 oz butter
- Herbs, to taste
- Salt and pepper, to taste
- Breadcrumbs for rolling
- Extra butter for baking
Method
- 1 Soak the butter beans in water overnight.
- 2 Boil the beans in fresh water until quite tender, then mash or pass through a nut-mill.
- 3 Fry the chopped onion in 1/2 oz butter until soft.
- 4 Mix the mashed beans with the fried onion, cold mashed potatoes, herbs, and seasoning.
- 5 Form the mixture into small rissoles and roll in breadcrumbs.
- 6 Place on a buttered baking sheet, dot with bits of butter, and bake in a moderate oven (350°F) until golden brown.
