Baked Butter Bean Rissoles

Ingredients

  • 2 oz butter beans
  • 1 tablespoon cold mashed potatoes
  • 1/2 small onion, chopped fine
  • 1/2 oz butter
  • Herbs, to taste
  • Salt and pepper, to taste
  • Breadcrumbs for rolling
  • Extra butter for baking

Method

  1. 1 Soak the butter beans in water overnight.
  2. 2 Boil the beans in fresh water until quite tender, then mash or pass through a nut-mill.
  3. 3 Fry the chopped onion in 1/2 oz butter until soft.
  4. 4 Mix the mashed beans with the fried onion, cold mashed potatoes, herbs, and seasoning.
  5. 5 Form the mixture into small rissoles and roll in breadcrumbs.
  6. 6 Place on a buttered baking sheet, dot with bits of butter, and bake in a moderate oven (350°F) until golden brown.
