Baked Brown Rice And Spinach Casserole
Ingredients
- 1 package thawed spinach
- 1 cup cooked brown rice
- 1 cup milk
- 1 egg
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Vegetable oil spray
Method
- 1 Preheat oven to 350°F. Spray a 2-quart baking dish with vegetable oil spray.
- 2 Place thawed spinach in a colander and press to remove excess water.
- 3 In a large mixing bowl, combine spinach, cooked brown rice, milk, egg, Parmesan cheese, salt, and pepper. Mix until combined.
- 4 Transfer the mixture to the prepared baking dish.
- 5 Bake for 30 minutes. Cut into eight squares and serve.
