Baked Broccoli Cheddar Rice Casserole

Ingredients

  • 1 cup low-fat cheddar cheese, shredded
  • 1 cup broccoli, chopped
  • 3 cups cooked brown rice
  • 1/2 cup fresh parsley, chopped
  • 1/2 teaspoon onion, chopped
  • 1/4 teaspoon salt
  • 3 eggs, beaten
  • 1 1/2 cups evaporated milk
  • 1 teaspoon Worcestershire sauce
  • nonstick cooking spray

Method

  1. 1 Preheat oven to 350°F. Coat a 9x9-inch baking pan with nonstick cooking spray.
  2. 2 In a large bowl, combine the cooked brown rice, shredded cheese, chopped broccoli, parsley, onion, and salt.
  3. 3 In a separate bowl, whisk together the beaten eggs, evaporated milk, and Worcestershire sauce.
