Baked Broccoli Cheddar Rice Casserole
Ingredients
- 1 cup low-fat cheddar cheese, shredded
- 1 cup broccoli, chopped
- 3 cups cooked brown rice
- 1/2 cup fresh parsley, chopped
- 1/2 teaspoon onion, chopped
- 1/4 teaspoon salt
- 3 eggs, beaten
- 1 1/2 cups evaporated milk
- 1 teaspoon Worcestershire sauce
- nonstick cooking spray
Method
- 1 Preheat oven to 350°F. Coat a 9x9-inch baking pan with nonstick cooking spray.
- 2 In a large bowl, combine the cooked brown rice, shredded cheese, chopped broccoli, parsley, onion, and salt.
- 3 In a separate bowl, whisk together the beaten eggs, evaporated milk, and Worcestershire sauce.
- 4 Pour the egg mixture over the rice mixture and mix well to combine.
- 5 Pour the mixture into the prepared baking dish and bake for 35 to 40 minutes, or until set.
- 6 Let cool slightly, then cut into squares to serve.
