Baked Brabanconne Potatoes
Ingredients
- 1 pound potatoes
- 1 tablespoon cream
- Salt and pepper to taste
- 1 shallot, chopped
- 2 spring onions, chopped
- Fresh parsley, chopped
- Nutmeg, grated
- 2 teaspoons grated cheese
- Breadcrumbs
- Grated cheese
- 1-2 pats salted butter
Method
- 1 Boil potatoes until tender, then rub them through a sieve to create a smooth puree.
- 2 Mix the puree with 1 tablespoon cream, salt, pepper, chopped shallot, spring onions, parsley, a dust of nutmeg, and 2 teaspoons grated cheese.
- 3 Place the mixture in a baking dish. Top with breadcrumbs, more grated cheese, and 1-2 pats of butter.
- 4 Bake in a moderate oven (350°F) until golden brown.
