Baked Bluefish With Mushroom Wine Sauce

Ingredients

  • 1 bluefish, scored and scaled
  • 3 tbsp butter, for pan
  • 3 tbsp white wine
  • 3 tbsp mushroom liquor
  • 1 tbsp chopped onion
  • 6 chopped mushrooms
  • Salt and pepper to taste
  • ½ tsp beef extract
  • ½ cup boiling water
  • ¼ cup white wine
  • 1 tbsp butter
  • 1 tbsp browned flour
  • Chopped parsley for garnish

Method

  1. 1 Place the bluefish in a buttered pan with 3 tbsp white wine, 3 tbsp mushroom liquor, 1 tbsp chopped onion, 6 chopped mushrooms, salt, and pepper.
  2. 2 Cover with buttered paper and bake for 15 minutes. Remove the fish and set aside.
  3. 3 Dissolve ½ tsp beef extract in ½ cup boiling water. Add ¼ cup white wine to the pan juices.
  4. 4 Thicken the sauce with 1 tbsp butter and 1 tbsp browned flour. Pour over the fish, sprinkle with parsley, and serve.
