Baked Bluefish With Mushroom Wine Sauce
Ingredients
- 1 bluefish, scored and scaled
- 3 tbsp butter, for pan
- 3 tbsp white wine
- 3 tbsp mushroom liquor
- 1 tbsp chopped onion
- 6 chopped mushrooms
- Salt and pepper to taste
- ½ tsp beef extract
- ½ cup boiling water
- ¼ cup white wine
- 1 tbsp butter
- 1 tbsp browned flour
- Chopped parsley for garnish
Method
- 1 Place the bluefish in a buttered pan with 3 tbsp white wine, 3 tbsp mushroom liquor, 1 tbsp chopped onion, 6 chopped mushrooms, salt, and pepper.
- 2 Cover with buttered paper and bake for 15 minutes. Remove the fish and set aside.
- 3 Dissolve ½ tsp beef extract in ½ cup boiling water. Add ¼ cup white wine to the pan juices.
- 4 Thicken the sauce with 1 tbsp butter and 1 tbsp browned flour. Pour over the fish, sprinkle with parsley, and serve.
