Baked Blue Cornmeal Raisin Bread
Ingredients
- 2 cups water
- 2 cups blue cornmeal (yellow may be used)
- 1 cup yellow cornmeal
- 1/2 cup raisins
- 1/3 cup sprouted wheat
- brown sugar
Method
- 1 Preheat oven to 300°F. Line an 8x8 inch cake pan with foil.
- 2 Bring water to a boil in a large pot. Add each ingredient one at a time.
- 3 Stir well until the mixture is smooth, then pour into the foil-lined cake pan.
- 4 Cover with foil and bake for 2 hours. The bread is done when a toothpick inserted in the center comes out clean.
