Baked Blue Cornmeal Raisin Bread

Ingredients

  • 2 cups water
  • 2 cups blue cornmeal (yellow may be used)
  • 1 cup yellow cornmeal
  • 1/2 cup raisins
  • 1/3 cup sprouted wheat
  • brown sugar

Method

  1. 1 Preheat oven to 300°F. Line an 8x8 inch cake pan with foil.
  2. 2 Bring water to a boil in a large pot. Add each ingredient one at a time.
  3. 3 Stir well until the mixture is smooth, then pour into the foil-lined cake pan.
  4. 4 Cover with foil and bake for 2 hours. The bread is done when a toothpick inserted in the center comes out clean.
