Baked Bell Pepper Nachos

Ingredients

  • 1 cup bell peppers
  • 2 teaspoons salsa
  • 2 cups seasoning (chili powder, garlic powder, ground cumin, pepper)
  • 3/4 cup cooked chicken, shredded or chopped (or beans or tofu)
  • cheddar cheese, shredded

Method

  1. 1 Preheat oven to 350°F. Wash bell peppers, remove seeds, and cut into bite-sized pieces.
  2. 2 Arrange pepper pieces in a single layer on a large foil-lined baking sheet.
  3. 3 In a medium bowl, combine salsa, seasonings, and meat, beans, or tofu.
  4. 4 Spoon the mixture evenly over the pepper pieces and top with shredded cheese.
  5. 5 Bake for 15 minutes, or until peppers are heated through and cheese is melted. Serve warm.
