Baked Beans With Salt Pork And Molasses
Ingredients
- 1 pint dried beans
- 1/2 lb salt pork, cut into 2-inch blocks
- 1 cup stewed tomatoes, rubbed through a sieve
- 4 tbsp molasses
- 1 tsp salt
- 1 onion, chopped fine
- 1/2 tsp pepper
- 1/4 tsp mustard
Method
- 1 Soak beans in cold water overnight, then drain, rinse, and place in a saucepan.
- 2 Cover with water, bring to a boil, and cook for 10 minutes.
- 3 Drain beans and transfer to a casserole or baking dish.
- 4 Add salt pork, stewed tomatoes, molasses, salt, onion, pepper, and mustard.
- 5 Mix well, add enough water to cover, and bake in a moderate oven (350°F) for 3 hours.
