Baked Bean And Rice Burritos
Ingredients
- 1 cup cooked rice
- 2 small onions, chopped
- 8 cups cooked kidney beans (or one 15-ounce can, drained)
- 1/2 cup salsa
- 1/2 cup shredded cheese
- 4 flour tortillas (10-inch)
Method
- 1 Preheat oven to 300°F.
- 2 Chop the onions and drain the kidney beans.
- 3 Mix the cooked rice, chopped onions, and beans in a large bowl.
- 4 Place a portion of the rice mixture in the center of each tortilla.
- 5 Fold the sides of the tortillas to enclose the filling.
- 6 Bake burritos for 15 minutes, then top with salsa and shredded cheese.
