Baked Bean and Cheese Tostadas

Ingredients

  • 6 flour tortillas
  • 2 teaspoons chili powder (optional)
  • 1 cup refried beans (fat-free, low-sodium)
  • 1 cup shredded cheddar cheese
  • 1 head romaine lettuce, shredded
  • 1 large tomato, chopped
  • salsa (to taste)
  • light sour cream (optional)

Method

  1. 1 Preheat oven to 350°F. Arrange tortillas in a single layer on a baking sheet and spray both sides with non-stick cooking spray.
  2. 2 Bake tortillas for 4 minutes or until crisp. If desired, mix chili powder into the refried beans.
  3. 3 Spoon 1/3 cup of refried beans onto each crisp tortilla and sprinkle with shredded cheese.
  4. 4 Bake for 10 minutes or until cheese is melted. Top with shredded lettuce and chopped tomato.
  5. 5 Serve immediately with salsa and optional light sour cream.
