Baked Bean and Cheese Tostadas
Ingredients
- 6 flour tortillas
- 2 teaspoons chili powder (optional)
- 1 cup refried beans (fat-free, low-sodium)
- 1 cup shredded cheddar cheese
- 1 head romaine lettuce, shredded
- 1 large tomato, chopped
- salsa (to taste)
- light sour cream (optional)
Method
- 1 Preheat oven to 350°F. Arrange tortillas in a single layer on a baking sheet and spray both sides with non-stick cooking spray.
- 2 Bake tortillas for 4 minutes or until crisp. If desired, mix chili powder into the refried beans.
- 3 Spoon 1/3 cup of refried beans onto each crisp tortilla and sprinkle with shredded cheese.
- 4 Bake for 10 minutes or until cheese is melted. Top with shredded lettuce and chopped tomato.
- 5 Serve immediately with salsa and optional light sour cream.
