Baked Bass With Shrimp Sauce
Ingredients
- 1 cleaned bass
- Oil and vinegar for marinating
- Slices of salt pork
- 1 tsp butter
- Boiling water
- 1 tbsp butter
- 1 tbsp flour
- 1 cup pan drippings
- Cayenne pepper
- Lemon juice
- ½ can chopped shrimp
Method
- 1 Marinate the cleaned fish for 1 hour in oil and vinegar.
- 2 Place fish in a baking pan with salt pork slices underneath and on top. Add 1 tsp butter and enough boiling water to prevent burning.
- 3 Bake for 1 hour, basting 2-3 times. Strain the gravy and set aside.
- 4 Melt 1 tbsp butter, whisk in 1 tbsp flour, and cook until brown. Add 1 cup of the reserved pan liquid (top up with boiling water if needed).
- 5 Cook sauce until thick, stirring constantly. Season with cayenne and lemon juice, then stir in chopped shrimp.
- 6 Bring sauce to a boil and pour over the fish to serve.
