Baked Bass With Shrimp Sauce

Ingredients

  • 1 cleaned bass
  • Oil and vinegar for marinating
  • Slices of salt pork
  • 1 tsp butter
  • Boiling water
  • 1 tbsp butter
  • 1 tbsp flour
  • 1 cup pan drippings
  • Cayenne pepper
  • Lemon juice
  • ½ can chopped shrimp

Method

  1. 1 Marinate the cleaned fish for 1 hour in oil and vinegar.
  2. 2 Place fish in a baking pan with salt pork slices underneath and on top. Add 1 tsp butter and enough boiling water to prevent burning.
  3. 3 Bake for 1 hour, basting 2-3 times. Strain the gravy and set aside.
  4. 4 Melt 1 tbsp butter, whisk in 1 tbsp flour, and cook until brown. Add 1 cup of the reserved pan liquid (top up with boiling water if needed).
  5. 5 Cook sauce until thick, stirring constantly. Season with cayenne and lemon juice, then stir in chopped shrimp.
  6. 6 Bring sauce to a boil and pour over the fish to serve.
