Baked Barley Spoon Bread
Ingredients
- 2 tablespoons pork drippings
- 3 cups boiling water
- 1 cup barley meal
- 2 eggs
Method
- 1 Heat pork drippings in a saucepan until slightly brown.
- 2 Add boiling water and barley meal, stirring constantly.
- 3 Cook in a double boiler for 30 minutes, then cool.
- 4 Stir in well-beaten egg yolks, then fold in beaten egg whites.
- 5 Bake in a greased dish at 350°F for 30 minutes.
