Baked Bananas With Caramel Sauce

  • 6 large bananas
  • 1 cup butter
  • 1/2 cup sugar
  • 2 teaspoons evaporated skim milk
  • 2 teaspoons cornstarch
  • 2 teaspoons water

Method

  1. 1 Preheat oven to 400°F. Place unpeeled bananas on a baking sheet and prick skin several times with a fork.
  2. 2 Bake bananas for about 8 minutes until skins turn black. Remove from oven.
  3. 3 In a saucepan over moderate heat, cook butter, water, and sugar until mixture turns medium brown caramel.
  4. 4 Whisk milk and dissolved cornstarch into the caramel. Return to heat and boil, stirring constantly, until thickened.
  5. 5 Peel and slice bananas lengthwise. Serve hot caramel sauce over the sliced bananas.
