Baked Banana Rice Pudding
Ingredients
- 1/4 cup rice
- 1 1/4 cups water
- 2 1/2 cups milk
- 2 eggs
- 3/4 cup sugar
- 2 bananas
- 1/2 teaspoon cinnamon
- 1 teaspoon butter
Method
- 1 Wash rice and cook in water until soft and absorbed.
- 2 In a bowl, combine milk, eggs, and sugar.
- 3 Peel bananas, rub through a sieve, and beat to mix.
- 4 Add rice to the banana mixture and turn into a baking dish.
- 5 Dust with cinnamon, dot with butter, and bake in a slow oven (300°F) for 30 minutes.
