Baked Banana Rice Pudding

Ingredients

  • 1/4 cup rice
  • 1 1/4 cups water
  • 2 1/2 cups milk
  • 2 eggs
  • 3/4 cup sugar
  • 2 bananas
  • 1/2 teaspoon cinnamon
  • 1 teaspoon butter

Method

  1. 1 Wash rice and cook in water until soft and absorbed.
  2. 2 In a bowl, combine milk, eggs, and sugar.
  3. 3 Peel bananas, rub through a sieve, and beat to mix.
  4. 4 Add rice to the banana mixture and turn into a baking dish.
  5. 5 Dust with cinnamon, dot with butter, and bake in a slow oven (300°F) for 30 minutes.
