Baked Apricot Jam Pancakes
Ingredients
- 1/2 pint milk
- 1/4 lb butter
- 3 tbsp sugar
- 3 oz flour
- 3 large egg yolks
- 3 large egg whites
- apricot jam
Method
- 1 Butter small individual pans or saucers.
- 2 Heat milk with sugar and melted butter in a saucepan.
- 3 Pour the warm milk mixture into a bowl and whisk in the flour until smooth.
- 4 Beat egg yolks and stir them into the batter.
- 5 Fold in stiffly beaten egg whites.
- 6 Spoon batter into prepared pans and bake at 350°F for 10 minutes.
- 7 Serve with apricot jam on top or folded inside.
