Baked Apricot Jam Pancakes

Ingredients

  • 1/2 pint milk
  • 1/4 lb butter
  • 3 tbsp sugar
  • 3 oz flour
  • 3 large egg yolks
  • 3 large egg whites
  • apricot jam

Method

  1. 1 Butter small individual pans or saucers.
  2. 2 Heat milk with sugar and melted butter in a saucepan.
  3. 3 Pour the warm milk mixture into a bowl and whisk in the flour until smooth.
  4. 4 Beat egg yolks and stir them into the batter.
  5. 5 Fold in stiffly beaten egg whites.
  6. 6 Spoon batter into prepared pans and bake at 350°F for 10 minutes.
  7. 7 Serve with apricot jam on top or folded inside.
