Baked Apples With Oatmeal Crumb Topping

Ingredients

  • 1/2 cup apple juice
  • non-stick cooking spray
  • 4 medium baking apples
  • 1/4 cup quick cooking uncooked oatmeal
  • 2 teaspoons brown sugar
  • 1/3 teaspoon ground cinnamon

Method

  1. 1 Preheat oven to 350°F and move rack to center. Spray a 9-inch square baking dish with non-stick cooking spray.
  2. 2 Wash, peel, and thinly slice the apples. Spread slices evenly over the bottom of the prepared baking dish.
  3. 3 In a small bowl, mix oatmeal, brown sugar, and cinnamon with a fork until combined.
  4. 4 Spread the oatmeal mixture evenly over the apple slices. Lightly pour apple juice over the top.
  5. 5 Cover the dish and bake for 20 to 30 minutes until apples just start to soften.
  6. 6 Uncover and bake for another 15 to 20 minutes until apples are fully soft.
