Baked Apples With Nutmeg Batter
Ingredients
- 8 apples, peeled and cored
- Brown sugar, for filling cores
- Grated nutmeg, for seasoning
- 4 egg yolks
- 2 cups flour, sifted
- 3 teaspoons baking powder
- Pinch of salt
- 2 cups milk
- 4 egg whites, stiffly beaten
Method
- 1 Peel and core the apples. Fill the cores with brown sugar seasoned with grated nutmeg. Place apples in a buttered baking dish.
- 2 Beat the egg yolks. Mix in the sifted flour, baking powder, and salt. Stir in the milk, then fold in the stiffly beaten egg whites.
- 3 Pour the batter over the apples. Cover and bake in a moderate oven (350°F) for one hour, or until the apples are tender and the topping is set.
- 4 Serve warm with any preferred sauce.
