Baked Apples With Nutmeg Batter

Ingredients

  • 8 apples, peeled and cored
  • Brown sugar, for filling cores
  • Grated nutmeg, for seasoning
  • 4 egg yolks
  • 2 cups flour, sifted
  • 3 teaspoons baking powder
  • Pinch of salt
  • 2 cups milk
  • 4 egg whites, stiffly beaten

Method

  1. 1 Peel and core the apples. Fill the cores with brown sugar seasoned with grated nutmeg. Place apples in a buttered baking dish.
  2. 2 Beat the egg yolks. Mix in the sifted flour, baking powder, and salt. Stir in the milk, then fold in the stiffly beaten egg whites.
  3. 3 Pour the batter over the apples. Cover and bake in a moderate oven (350°F) for one hour, or until the apples are tender and the topping is set.
  4. 4 Serve warm with any preferred sauce.
