Baked Apples Stuffed With Rice Pudding
Ingredients
- 4 large golden pippin apples
- 1 cup cooked rice
- 1/2 cup heavy cream
- 5 egg yolks
- Sugar to taste
- Freshly grated nutmeg
- Sugar for glazing
Method
- 1 Preheat oven to 350°F. Peel and core the apples carefully, keeping them whole.
- 2 Place the apples in a baking dish.
- 3 Mix the cooked rice, cream, egg yolks, sugar, and nutmeg until well combined.
- 4 Pour the rice mixture over the apples in the dish.
- 5 Bake for 45 minutes until tender.
- 6 Sprinkle sugar on top and glaze under the broiler for a few minutes.
