Baked Apple Rice Custard

Ingredients

  • 2 oz rice
  • 2 cups boiling water
  • 4 small apples
  • 1/2 cup sugar
  • 1 tsp vanilla
  • 1 egg, well-beaten

Method

  1. 1 Wash rice and cook in boiling water until soft and liquid is absorbed.
  2. 2 Peel, chop, and cook apples in cold water until soft, then rub through a sieve.
  3. 3 Mix sieved apples with sugar, vanilla, beaten egg, and cooked rice.
  4. 4 Pour mixture into custard cups and bake at 350°F for 15 minutes.
