Baked Apple Meringue Pudding
Ingredients
- peeled and cored apples
- butter
- sugar
- vanilla
- 1 ¼ cups apple purée
- 4 egg whites
- 3 tablespoons powdered sugar
Method
- 1 Boil peeled and cored apples until tender, then press through a colander. Season with butter, sugar, and vanilla.
- 2 Cook the purée in a saucepan until quite dry and firm.
- 3 Whip 4 egg whites very stiff and sweeten with 3 tablespoons powdered sugar.
- 4 Lightly and quickly mix the hot reduced apple purée with the meringue.
- 5 Turn into a pudding dish, smooth top into a mound, sprinkle with sugar, and bake in a slow oven (300°F) for 20-25 minutes.
