Baked Apple Meringue Pudding

Ingredients

  • peeled and cored apples
  • butter
  • sugar
  • vanilla
  • 1 ¼ cups apple purée
  • 4 egg whites
  • 3 tablespoons powdered sugar

Method

  1. 1 Boil peeled and cored apples until tender, then press through a colander. Season with butter, sugar, and vanilla.
  2. 2 Cook the purée in a saucepan until quite dry and firm.
  3. 3 Whip 4 egg whites very stiff and sweeten with 3 tablespoons powdered sugar.
  4. 4 Lightly and quickly mix the hot reduced apple purée with the meringue.
  5. 5 Turn into a pudding dish, smooth top into a mound, sprinkle with sugar, and bake in a slow oven (300°F) for 20-25 minutes.
