Baked Apple Custard With Lemon

Ingredients

  • 6 sour apples, peeled and grated
  • Juice and grated rind of 1 lemon
  • 4 egg yolks, well-beaten
  • 2 tablespoons butter, creamed
  • ½ cup sugar
  • Spice to taste
  • 4 egg whites, stiffly beaten
  • Butter for greasing dish
  • Cream for serving

Method

  1. 1 Peel and grate six sour apples. Add the juice and grated rind of one lemon.
  2. 2 Mix in the well-beaten yolks of four eggs and two tablespoons of butter creamed with half a cup of sugar.
  3. 3 Season with spice to taste, then fold in the stiffly beaten whites of the eggs.
  4. 4 Pour into a buttered baking dish and bake in a moderate oven (350°F) until set.
  5. 5 Serve cold with cream.
