Baked Apple Custard With Lemon
Ingredients
- 6 sour apples, peeled and grated
- Juice and grated rind of 1 lemon
- 4 egg yolks, well-beaten
- 2 tablespoons butter, creamed
- ½ cup sugar
- Spice to taste
- 4 egg whites, stiffly beaten
- Butter for greasing dish
- Cream for serving
Method
- 1 Peel and grate six sour apples. Add the juice and grated rind of one lemon.
- 2 Mix in the well-beaten yolks of four eggs and two tablespoons of butter creamed with half a cup of sugar.
- 3 Season with spice to taste, then fold in the stiffly beaten whites of the eggs.
- 4 Pour into a buttered baking dish and bake in a moderate oven (350°F) until set.
- 5 Serve cold with cream.
