Baked Apple Bread Pudding With Sherry Butter Sauce
Ingredients
- 8-10 large apples, peeled and thinly sliced
- 1/2 cup grated white bread
- 6 egg yolks
- 4 egg whites, beaten lightly
- 1/2 cup heavy cream
- 1 tbsp brandy or sherry
- 4 tbsp clarified butter
- Sugar to taste
- Sack (sherry), sugar, and melted butter for serving
Method
- 1 Place apple slices in a small amount of water and stew gently until tender. Drain well.
- 2 In a large bowl, combine grated bread, beaten egg yolks, beaten egg whites, cream, brandy, and clarified butter. Mix well.
- 3 Fold in the stewed apples and sugar to taste. Beat the mixture lightly until combined.
- 4 Pour the mixture into greased tea cups or ramekins. Bake in a moderate oven (350°F) for a short time until set.
- 5 Remove from cups and serve immediately with a sauce of sherry, sugar, and melted butter.
