  • 6 russet apples
  • 1 tea-cupful rice
  • Milk
  • Lump sugar or loaf sugar, to taste
  • Lemon peel, grated
  • Cream
  • Cinnamon
  • Nutmeg
  • 2 egg whites
  • Sugar, for dusting

Method

  1. 1 Peel, quarter, and stew the apples until soft. Sweeten with lump sugar and mix in grated lemon peel.
  2. 2 Boil the rice in milk until thick. Sweeten well with loaf sugar, then stir in cream, cinnamon, and nutmeg.
  3. 3 Place the stewed apples in a dish and cover them with the thick rice mixture.
  4. 4 Beat the egg whites to a strong froth and spread them over the rice. Dust with sugar and brown in a moderate oven (350°F).
