Baked Apple And Rice Casserole
Ingredients
- 6 russet apples
- 1 tea-cupful rice
- Milk
- Lump sugar or loaf sugar, to taste
- Lemon peel, grated
- Cream
- Cinnamon
- Nutmeg
- 2 egg whites
- Sugar, for dusting
Method
- 1 Peel, quarter, and stew the apples until soft. Sweeten with lump sugar and mix in grated lemon peel.
- 2 Boil the rice in milk until thick. Sweeten well with loaf sugar, then stir in cream, cinnamon, and nutmeg.
- 3 Place the stewed apples in a dish and cover them with the thick rice mixture.
- 4 Beat the egg whites to a strong froth and spread them over the rice. Dust with sugar and brown in a moderate oven (350°F).
