Baked Apple And Almond Bread Pudding

Ingredients

  • 2 lbs cooking apples
  • ¾ cup mixed currants and sultanas
  • 1 heaped tsp ground cinnamon
  • 2 oz blanched and chopped almonds
  • Sugar to taste
  • Allinson wholemeal bread
  • Butter
  • ¼ cup water

Method

  1. 1 Pare, core, and chop apples. Cook with ¼ cup water until soft.
  2. 2 Stir in currants, sultanas, cinnamon, almonds, and sugar.
  3. 3 Cut thin slices of bread and butter. Line a buttered pie dish with bread.
  4. 4 Layer apple mixture and bread/butter slices until dish is full, ending with bread.
  5. 5 Bake for 45 minutes to 1 hour.
