Baked Apple And Almond Bread Pudding
Ingredients
- 2 lbs cooking apples
- ¾ cup mixed currants and sultanas
- 1 heaped tsp ground cinnamon
- 2 oz blanched and chopped almonds
- Sugar to taste
- Allinson wholemeal bread
- Butter
- ¼ cup water
Method
- 1 Pare, core, and chop apples. Cook with ¼ cup water until soft.
- 2 Stir in currants, sultanas, cinnamon, almonds, and sugar.
- 3 Cut thin slices of bread and butter. Line a buttered pie dish with bread.
- 4 Layer apple mixture and bread/butter slices until dish is full, ending with bread.
- 5 Bake for 45 minutes to 1 hour.
